Known for its refined yet playful take on ramen, NR offers Kyoto-style bowls, summer-favorite Tsukemen, and inventive dishes like Wagyu + Bone Marrow Mazeman and Hokkaido-style soup curry with customizable spice levels. The culinary vision comes from Chef Takashi Igarashi, blending Hokkaido roots with Kyoto-style kaiseki finesse. Behind the bar, owner Shigefumi Kabashima crafts cocktails with Japanese precision and global flair—think Frozen Botanical Garden, clarified Blue Cheese martinis, and Japanese melon soda riffs. NR is the result of Shigefumi Kabashima, a celebrated bartender known for his work at NYC’s legendary Angel’s Share. Inspired by Japan’s Meiji-era port towns and the cultural crossroads where East meets West, Shige teamed up with Chef Takashi Igarashi to create a modern ramen and cocktail bar that marries tradition with innovation. The name “NR,” short for “N’Roll,” reflects their philosophy of constant movement, creativity, and cultural exchange.
