This was the bowl that changed everything for me. After a forgettable first ramen experience in 2013, I avoided ramen for seven years — until I walked into a tiny spot on a quiet LES side street: Ramen Ishida. That first taste of their truffle-infused shoyu broth stopped me in my tracks. Rich, earthy, and perfectly balanced, with noodles that had the perfect bite and chashu that melted effortlessly — it was the ramen I didn’t know I’d been waiting for. Since then, I’ve had bowls in Tokyo, Kyoto, and Osaka — and Ishida still ranks at the top. Now, with the opening of their Chelsea location, it’s even easier to fall in love with this spot. More seats and less of a wait. Whether you’re a ramen skeptic or an expert, Ishida is one of NYC’s finest. I recommend going to the OG location over this one, but this is still great.
