A nice spot with a rustic atmosphere and authentic ramen. They have ramen made from 2 signature broths - tonkotsu and chicken, as well as vegan options. The Tori-shio ramen was straightforward without frills. Noodles were the kansui type with menma, seaweed, strips of grilled chicken thighs, scallions, and a seasoned egg as toppings. The broth was a little on the salty side. I was a little thrown off that the gyoza was deep-fried (not pan-fried) but otherwise most what you would find on the menu are common popular items that you would find in any ramen place. I would summarize my experience/meal as nice but not outstanding, but if you're in Williamsburg and looking for a decent bowl you can't go wrong coming here.
